Christmas time...

So, the end of the year is nearing, and I haven't written on our blog nearly as often as I wanted.  But, that tends to happen with me, what can I say? :)  We had a really great Thanksgiving and Christmas!!  I finally got to go to the San Diego Zoo, which was a-maz-ing!  We also toured a US Navy Submarine.  The San Francisco.  Talk about cool, although, very, VERY, cramped!  If you have claustrophobia, I definitely do not recommend this. :)

Now, The San Diego Zoo was pretty awesome.  I'd be lying if I didn't say that the main reason I wanted to go was so I could see the Pandas. :)  But, as we walked in, we turned to the right, and low and behold I saw a sign for Koalas.  Now, most of you probably don't think that it is as awesome as I thought it was, but Koalas are my favorite animal, and always have been.  I didn't even know that they were at the SDZ until we got there, so those cuddly little guys were definitely my favorite, with the Pandas and the Polar Bears in a tie for second.

We also had the chance to go to the beach while we were down there.  I was so excited for weather over 40 degrees, that I got in my swimsuit and everything.  I know there were some Californians that thought we were crazy for being in just our suits in 60 degreeish weather, but I wasn't cold at all. :)  We went to La Jolla Beach, which was beautiful, and we played in the sand.  I really do wish that we had a real Ocean beach closer than 8 hours away here.

Christmas was really enjoyable this year.  Ryan and I went a little overboard on eachother, since it was our first Christmas together, but it was worth it!  I like to pretend that Santa still comes to our house and everything, and I even left a doughnut and milk out for him (I had to work Christmas Eve so I didn't have time to make cookies.) Ryan is so awesome, and he indulged me.  I am not sure how "Santa" did it, but when I woke up in the morning, there was a massive present, which wasn't there before, and the doughnut and milk were gone.  It really felt like we both got to experience the magic of it all again. :)

A new year is about to begin, and I am about to embark on a whole new journey of learning how to effectively lose weight with my stupid hindrance of a medical problem.  I refuse to do it through surgery or HCG or anything like that, simply because I know that the healthiest way to do it is through the correct diet and exercise.  I also know that it is going to be tougher for me than it is for other women, but nothing that is worth it is ever easy, right?  So, I will be doing weekly (hopefully) posts about my progress, and my struggles, and all that fun stuff.  I will be starting this on January 4, since one of my best friends is getting married on the 3rd and her bachelorette party is on the 2nd, so I want to be able to make a clean start. :) I have already completely stopped drinking all soda and caffeine, and I know that this will definitely help. :)  I have been off of it for 3 weeks, and I am proud of it!

I Just HAVE to Share This...

So, yesterday at work, I am sitting there all alone, working hard, waiting for the graveyard shift to come in and help me with the excessive amount of chats and calls coming in, so I could take a moment to relax, when Austin (the graveyard shift, sales technically closes at 10pm, but he comes in to help out with the after hours stragglers) comes in.  He sits right behind me, and if I turn around I can see his computer.  So, I turn around to ask him a question, and I see this absolutely beautiful picture of a sunset on the ocean.  So, I comment on how breathtaking the picture is, and he then proceeds to tell me about this blog.  He told me a little bit about the background of the blog, and showed me a few pictures, and I knew I had to check it out more when I had a chance.

So, as soon as I got home, I hopped onto the computer, and went to her site.  Kelle takes the most incredible, heartwarming pictures I think I have ever seen!  So, I start perusing the blog, loving everything I am seeing, and then I see a link at the top that says, "Start Here If You're New".  I click on this link, and I start reading her very first post.  Let me just say that this is probably the most amazing blog I have ever read.  It evoked so many emotions from deep within my soul.  Emotions and feelings I never knew I possessed were stirring between the tears rolling down my face and the randomly occurring smiles. 

This blog is so incredible, and I wanted to share it with you all, because I would feel selfish if I kept something this inspiring to myself.  I hope you all get a moment to read this, and revel in the powerful emotions it invokes.  I also advise you all to have a box of tissues near you, just in case.  I also want to say one last thing.  If you don't have a chance to read it, just promise me that you will look at all of the amazing little things in life that make it so worth living!  Look at those crayon marks on the wall, or your husbands dirty laundry on the floor, with a smile, and remember how lucky you are to be so blessed!

Whew... Where does the time go?

I can't believe it has been more than a month since I last updated my blog, but I started working full-time, and since then I feel as if I have no extra time for things like this anymore, but I do miss it, and Kristin misses my posts :) so I thought I ought to write every once in a while.  So, here goes.


I am now working at BlueHost in the sales department, and I am making good money.  My favorite thing about this place is that they actually look at how hard you work, not who you're related to, or if you're a man.  I also love that they actually notice how hard we work, and that we get paid according to that. 

Ryan works at BlueHost too, and my supervisor was awesome enough to give me the exact same schedule as my husband!  So, we get to drive to work together, and have lunch together, and we get the same days off!  (We work nights and weekends, which is actually perfect for us because we are both total night owls.)  Anyway, it really has been a great job for both of us! 

I am still somewhat of a procrastinator, and Ryan and I enjoy spending time together so much, that I hardly get anything done, but I love our little house, and I really love being married! :)

So, I do have more recipes to share, but that will have to be next week's post. :)

I hope all is well with all of you, and we all need to get together sometime and play! :)

Today is the 2 month mark, which kind of surprised me.  I couldn't believe it had already been 2 months, or that it has already been more than a month since we got home from our honeymoon in the Caribbean!  I got to thinking about how much I've enjoyed it so far.  The adjustments that we've both made (mostly with sleeping, I'm used to having a cold room and he likes it warmer.) and how easy it was to make such a huge change.  We are starting to get into a really good routine, and he is so supportive of all of my hopes and dreams!  I can't believe I got lucky enough to find my soul-mate, and I can't even express how much I love him! 

Anyway, I also wanted to post a new recipe.  This new recipe is called "Cinnamon Roll Waffles."  You see, I love breakfast food, and so does Ryan, so I wanted to try some new things.  I found a recipe called "Cinnamon Roll Pancakes" but I like waffles better, so when I saw that she had also posted a recipe for waffles, I decided to try that instead.  It was yummy, but a little too sweet for us.  I'm glad that we tried it, and I might make it again just for fun.  The author is very creative and fun!  Here is the link to her website:

I love trying new things, which is how I got so hooked on Sushi (Another thing I can attribute to Ryan), so whenever I come across an interesting recipe or food, I have to try it.  Hope you enjoy!

Finally starting to catch up... And a new recipe!

I am finally starting to catch up with my life.  I know what you're thinking... "How do you get behind in your own life?"  Well, let me tell ya... I happen to be the queen of procrastination.  No matter how hard I try, I just can't get ahead on things.  Until now.  I am finally starting to catch up with organizing my house, and I have finally started getting Thank you notes done for my wedding.  I've been making a lot of yummy meals, (and some not so yummy, some recipes I've found really aren't very good, but it does teach me to improvise, which is good)

My favorite recipe so far would have to be Cafe Rio Burritos.  It's super yummy, and I've been given a really yummy recipe for their dressing!  The pork tastes more like Costa Vida's, but I have a friend who's friend worked at Cafe Rio, and gave me the recipe, but something had to be missing, because it tasted similar, but I really didn't like it.  The dressing is dead on though, so I wanted to share! Anyway, here is the recipe, it's pretty easy.  I hope you all like it!

 Cafe Rio Pork

3 lbs Pork Roast
8 oz Mild salsa
12 oz Coke
1 C Brown Sugar
     Cook pork on high in crock pot with water for 4 hours
     Drain water, shred pork into big chunks, mix salsa, coke, and sugar together
     Pour sauce mixture over pork
     Cook 4 more hours on high

Tomatillo Dressing

16 oz La Victoria Green Salsa
1/2 C Sour Cream
1/2 C Mayo (light if you can)
1/2 C Buttermilk
1 C Fresh Cilantro
2 cloves Garlic
1/4 tsp Cayenne Pepper
1/2 tsp Salt
2 Tbsp Lime Juice (I used lemon juice)
1/4 tsp Cumin

Mix in blender, and you're done!  I recommend making it ahead of time and refrigerating it, but it's great both ways!

I also just use plain rice, but you can always spice it up if you want.  I just buy normal tortillas and layer with the rice on bottom, cheese, lettuce, tomatoes, and that's it.  We love this at my house!

New Memories and Old Memories!

Today I realized... "I haven't posted on my blog in a REALLY long time!"  I mean, the last time I posted was while we were still engaged, which was at least more than 6 weeks ago.  How could I let that much time pass and not post on my blog?  Didn't I say that I was going to keep up better on this one than I did on my last one?  Well, so far I have actually done better, but I enjoy writing, so I'm not exactly certain why I don't do it more often...  Maybe it's because I've been working tirelessly to get my 3 bedroom house in order.  Or maybe it's because I'm a newlywed (if you know what I mean) ;) ...  Or maybe it's because it took me forever to recover from our honeymoon to the Caribbean (which was AWESOME!!!)  Whatever the reason for my inattentive behavior towards our blog... I apologize! 

Lately, I've really been trying to cook every night, and make lunches for my sweet husband every day, but the other night I realized I had run out of recipes I wanted to try, and I didn't have a lot of ingredients.  Have you ever had one of those nights when you know your husband/family is starving, but you don't know what to make?  Well, I had one of those.  I looked through recipe books, or thought of some of Ryan's favorite meals, but I just didn't have all of the ingredients for those until I finally stumbled across a recipe in one of my cheap little cookbooks ("101 Things to do with Chicken, $3.99 at Seagull Book and I love it!).  The recipe was salsa chicken, and it was delicious.  It only had 4 ingredients, all of which I actually had on hand (which was kind of a miracle, lol), and it didn't take me long to cook at all!  This occurrence got me thinking, "I should get recipes from people on facebook."  Well, nobody actually sent me a specific recipe, they just sent me to different websites that they liked, and I've followed those websites and blogs to other blogs and websites, and I am so excited to try out some of these new recipes!  This also got me to thinking, that I should post some of these recipes on here for everyone else to see too!

Anyway, enough about cooking, and more about us!  We both love being married!!!  It's so nice to be able to have our own place, and not have to leave at night!  We are almost all settled into our new place, and Ryan found a good job working for BlueHost.  Right now I am basically a housewife, trying to keep our home clean and cooking dinners every night.

My brother, Bill, is in town from Washington, so we all went up the canyon last night and made a fire and had smores.  It reminded me of those really fun times down in Mona at the Bassetts' house.  I really loved those nights when we would all get together and play some softball in their pasture.  Afterwards, we would all gather round the firepit and roast hot dogs and talk and laugh!  Doug was always so good to me!  Really, he was good to everyone.  He made me feel at home, and I always enjoyed spending time with him.  The effort that he and Arlene always put into those nights was evident, yet neither of them made it seem like a big deal.  We even watched a couple of movies on their barn a few of those nights.  I think about Doug often.  I find myself wishing that I had gone to visit him more after I moved.  Doug really was an incredible man, and I miss him a lot!  Luckily, Blaine, his son, is so similar to him that I always know I have a good friend just a call away!  (Even if we are old and married!  Lol.)  To be honest, I think I owe the fact that Blaine and I grew to be so close to those nights and fun times!  Maybe not, I can't fully remember. 

Well, this is quite a long post!  I will hopefully post again soon, and I will try to post the recipes that I end up loving, so that everyone can try them too!  Hope all is well with all of you!

Conference!!!

So, Ryan and I both had never been to a real, live session of conference before.  We;ve both been up to the conference center and temple Square and all that, but we had never been to a session.  Well, we got the chance to go this last weekend after Ryan fought to get 2 of 6 tickets given to his ward.  It was incredible!  Now, for all of you who really know me, you know that I have trouble falling asleep before 4am every night, and since I needed to be awake by 5:30 am to get ready and make it to Ryan's house in time to make our carpool, I ended up pulling an all-nighter.  All I have to say is that not having any sleep sucked, but I still really enjoyed the opportunity we had to be in the conference center while the servants of the Lord shared their messages with us!  SO COOL!!!

Ryan and I are still looking for a place to live.  We want to buy a house, but that takes time, so for now we are just looking for a fairly inexpensive apartment so we can save money for our down payment.  We are so close to the big day, that a lot of things are now seeming a lot more real to us!  I have fallen far behind on getting our invitations finalized, and I am starting to get a little more stressed, but we are both so excited to be married to each other for time and all eternity!  Last night we both joked about how we wish we had just eloped months ago. :)

I thought I would give you guys a quick preview of some of our engagement pictures!  We had a blast taking them, and our photographer is so laid back that we didn't feel rushed at all!  She is so great!  Wish me luck on getting everything done in time!  Lol.

33 Days To Go

Wow, if anyone had told me how fast, and how fun, our engagement would be, I don't think I would've believed them.  I have so much that I want to write about, so many trips that we've been on, and adventures we've had.  I only have 33 days left as a single woman, and my ENTIRE life is about to change!  I have a lot left to do to prepare for the wedding, but I am SO excited!!!

I still have all of my invitations to address... ugh, and I have to finalize our reception menu, and send the DJ our list of "must have" songs!  I could go on and on, but most of you have already experienced the stress of putting a wedding together, so I will refrain!

I can't believe that I finally found the perfect man for me!  Now, I know I'm not a Larson yet, but I figured that since I will be soon, I could go ahead and name our blog this!  Hopefully, now that I have something and someone else to write about, I will keep up with this blog.
